Tripe and Green Roxburgh Fig Salad
Roxburgh Figs are both a culinary and a botanical marvel. Nati South and Southeast Asia, this apple sized fig emerges directl the trunk of the Roxburgh fig tree, growing under the shade of shockingly large and glossy heart-shaped leaves. These floral, overgrown bulbs of figs are typically pickled when green in Vietnam to reduce the natural tannins, and in the City of Hue are the centerpiece of a funky and texturally heterogenous salad featuring thin slices of tripe, pronounced chili spice and funky shrimp paste.
