Pastry Lamination has always been my baking passion (the art of folding dough with butter many times to produce flaky layers of goodness) . There’s just something so beautiful about a laminated pastry. the layers, the honeycomb structure, the butter. But it’s also becoming a bit of a dying art. Especially when we don’t think twice about paying $5 for a Starbucks croissant that was mass-produced, baked, frozen and shipped. We’re also saturated in our area now by French chain bakeries that ship in pre-made pastries (although still beautiful and delicious).
Buy the handmade croissant. Support the bakeries keeping this craft alive. To my knowledge there are only 6 actively laminating in house in our area - , , , & . If you haven’t paid them a visit recently get out there and get a handmade pastry! 🥐
