Since opening, the Tarte Flambée has held a place on the Bar Room menu, becoming a true staple. A nod to Chef Gabriel Kreuther’s influence, Tom Allan put a twist on the classic Alsatian preparation with his own rendition, trading traditional crème fraîche for creamy burrata and baking until perfectly crisp.

“Some dishes become part of the fabric of a restaurant,” says Chef Thomas. “The Tarte Flambée is one of those. It’s simple enough to enjoy with a martini at the bar, but special enough to set the tone for the meal.”

Today, Chef Diego owns the ex*****on in the kitchen, carrying forward a Bar Room favorite that has become part of The Modern’s story.

Last week we had the honor to welcome our friends Masala y Maíz for “The Modern x Masala y Maíz: A Celebration of Frida and Diego”. The two evenings featured a one-of-a-kind collaborative dinner celebrating the culinary heritage of Mexico City and the MoMA The Museum of Modern Art exhibition Frida and Diego: The Last Dream. Guests enjoyed a private tour of the exhibit, and enjoyed a multi-course menu featuring dishes unique to The Modern and Masala y Maiz cooking rooted in tradition and innovation.
