Meet Chef Justin, , Executive Sous Chef at The Modern.

From a young age, Justin found his place in the kitchen growing up in New York City, first alongside his mom and grandmother, then working his way through nearly every role in restaurants. After a stint in Germany, he was drawn to The Modern’s seasonal approach and celebration of ingredients, where he’s spent the last five years honing his voice on the line.

Justin’s time abroad continues to shape his cooking style, including the first Bar Room dish he brought to the menu: a Swabian-style German potato salad, warm and tangy, and a staple dish of the region.

The Modern’s Jungle Bird.

Our take on this crushable 70s classic is built around a complex blend of rums: aged Barbadian and Jamaican distillates, agricole from Martinique, and a funky house ‘blackstrap’ with notes of coffee and liquorice.

To serve, we give it a hard and fast shake alongside clarified pineapple cordial, lime and Campari, before pouring it over a mountain of crushed ice.

We’re thrilled to introduce a new installation by Julien Ceccaldi, now on view in our front window on West 53rd Street in collaboration with .

Influenced by underground comix, 1990s anime, and shōjo manga, the composition captures the discomfort, melodrama, and romance of contemporary social life.

Inspired by the piece, The Modern now serves Tasteful Theater. A cherry-accented sour layered with Campbeltown Scotch, Armagnac, and barley shochu, finished with a salty-sweet cold foam. Indulgent with a hint of smoke, the cocktail is designed to be savored at any point in the meal, any time of day.

Sarah joined The Modern team in 2014 as a line cook and has since grown to be a cornerstone of the kitchen. As Chef de Cuisine working side-by-side , she brings finesse to every service, setting the tone for how the team works and shows up together.
 
Sarah often compares the kitchen to a team sport — coaching in real time, building trust, keeping energy high, and making sure everyone is set up to succeed.
