We have been running a pasta special made with pappardelle noodles comprised of 100 percent Kernza flour, water, and salt. Kernza is a perennial grain with 10 ft. or longer roots that can grow in drier climates and has high levels of protein, nutrients, and flavor. showed a movie Saturday night for Earth Day about Wes Jackson’s efforts at The Land Institute to promote the adoption of kernza for regenerative farming. Many of you who saw the movie came out to last night to try the pasta for yourselves and join us on our inaugural Sunday dinner service. All the farms in the gallatin valley have run out of root vegetables from last year but we found these beautiful fingerling potatoes from Foothill Farm in Missoula and kindly delivered them to us for this yummy version of patatas bravas. We have always wanted a way to indicate the provenance of each component of each dish on our menu without littering the verbiage with dozens of “house-made” and repetitions of the names of all the ranches that we buy our meat from. Big news folks! We will be opening on Sundays beginning April 19th🥳 . Just in time for the beginning of the growing season on our farm. Lauren has begun delivering her amazing greens mix, sorrel for pesto in the current gnocchi dish, and mint. Spring is such an exciting time to be a cook or a guest at a restaurant where the menu is written by the produce that is grown on our own farm. Let the games begin!
