Meet Sam (he/him)! When he’s not busy making some of the best pasta dishes in town, you can find him zipping around on his motorcycle (probably in a very cool Hawaiian shirt). Get to know him a little more:

What is your role? I’m part of the kitchen staff!

What’s your favorite cause around town? I think the ATX Free Fridge Project (ATX Free Fridge Project) does a great job helping those in need find a meal, we’ve also done some work here at the restaurant for them over the holiday season which I think is very cool.

Current favorite dish at Buf? Any of the pastas, I also enjoy making them (we can confirm he is very good at making them).

What’s your dream meal? Lox & bagels.

Any fun facts to share? My head is full of useless trivia.

We heard it’s International Grenache Day and the timing couldn’t be more perfect.

It’s crush season in the Northern Hemisphere, and this month our W**e Club is crushing on… Grenache! The Grenache grape comes in three colors: blanc, gris, and noir. One of the world’s most widely planted grape varieties, Grenache has a unique ability to adapt to its surroundings, producing w**es that range from ethereal to punchy, fragrant to brooding, and playful to complex.

September’s featured organization is Lirios Pediatrics.

Lirios Pediatrics is the only clinic in Texas providing completely free, comprehensive pediatric care to uninsured children — including well-child exams, acute and chronic illness care, vaccinations, X-rays, medications, lab work, and mental health counseling.

Texas has the highest rate of uninsured children in the nation (more than double the national average). In 2025, they served more than 1,700 unique patients.

Through their Expanding Care for Kids campaign, they are raising $250,000 to move into a larger facility and hire additional staff so they can serve 3,000 children per year by the end of 2027. Every dollar helps them make sure no child in Texas is ever turned away from the care they need.

As always, $1 from every glass of house w**e sold during happy hour at both locations will be donated to this amazing cause.

You may have noticed a new face around Chavez. We’re delighted to share that Adam (he/him) has joined us as Chavez’s General Manager. While he’s new to us, he’s not new to restaurants in Austin. Get to know a little more about him below:

What are you most excited about for this role? The amazing team. And getting to be a part of my favorite restaurant in town.

What’s your favorite cause/charity around town? Austin Parks Foundation? It may be too hot for me right now, but we need great public outdoor spaces! Also Austin Pets Alive.

Current favorite dish/drink at Buf? Cavatelli al Pomodoro. Gotta celebrate in season tomatoes as much as possible. And as if I didn’t need another reminder of how delicious riesling can be, the Vollenweider Goldgrube Kabinett I opened the other night was the best w**e I’ve tasted this year. Also, drink more Ch*****ne! That’s my New Years resolution every year.

August’s featured nonprofit is Capital Area Counseling (CAC).

Since 1980, they have provided affordable mental health care to Central Texans. Their mission is to make high-quality counseling accessible to everyone. CAC provides counseling for individuals, couples, families, children, and groups, helping people navigate a wide variety of topics. They also help train the next generation of mental health professionals, expanding access to care throughout our community.
