🥩 GRASS-FED BEEF POT ROAST
Ingredients:
• 2½ lb grass-fed chuck roast
• 4–5 cloves garlic, smashed
• 1 small onion, rough chopped
• 2 carrots, peeled + rough chopped
• 1–1½ cups celery, chopped
• 1 qt beef stock
• 2 bay leaves
• Olive oil
• Sea salt, smoked paprika, garlic powder + cayenne
Method:
Season roast generously on both sides. Sear in olive oil until deeply browned. Add vegetables and sauté until vibrant. Transfer everything to an oven-safe pan, pour beef stock over the meat and vegetables, add bay leaves, and cover tightly. Bake at 350°F for about 3 hours, or until fork-tender.
Remove the roast, shred into bite-sized pieces, and return the broth to a pot. Reduce until flavorful and slightly thickened. Taste and adjust seasoning, then add the meat back in. ❤️
🥬 LEMON-SCENTED COLLARD GREENS
Ingredients:
• 4 bunches collard greens, stemmed + chopped
• 3–4 cloves garlic, minced
• Olive oil
• 1 qt vegetable stock
• Sea salt, smoked paprika, garlic powder + cayenne
• Juice of 1 lemon
Method:
Sauté garlic in olive oil until fragrant. Add washed collards and vegetable stock. Cover and cook until the greens begin to soften. Season, stir, cover again, and continue cooking until tender.. maybe about 45 minutes, depending on heat. Add lemon juice during the last 10 minutes of cooking. 🍋.
🍠 MASHED SWEET POTATOES
Ingredients:
• 5 small-medium sweet potatoes
• ½ cup butter, melted
• Agave, to taste
• Sea salt
• Cayenne pepper
Method:
Wash sweet potatoes and roast whole at 350°F until fork-tender. Peel while warm and place the potatoes in a bowl. Add melted butter, agave, sea salt + cayenne. Mash until smooth and creamy. Adjust seasoning to taste. 🤎
