Well folks, I know everyone has been wondering what’s going on with this biscuit truck 2026 season, and honestly, it took me months to decide what is going to go on for the 2026 season. The last couple of years have been extremely hard with inflation and employee shortage. Entrepreneurs try to hide that part to show their customers the greatest love and care that they deserve, but The Southern Belle has been across country from all of her friends and family and running and repairing a food truck by herself a lot, and it has become more and more difficult the last few years with everything going on in our economy. After long debate and thinking, I have decided that I’m going to move back home with friends and family to have the support that I need during these crazy times. Do know this has been an extremely hard decision for me!!! Five years strong in Colorado and I became the biscuit queen because of YOU WONDERFUL, AMAZING CUSTOMERS!! It has been a heck of a ride going up and down mountain passes, traveling county to county, and serving biscuit love to the whole Western slope of Colorado. Man oh man, what a ride!!! I am extremely grateful for everyone’s love and support that I have had in Colorado. I literally could not have done this without y’all. With a heavy heart I have to say this is one of the toughest decisions I’ve ever made in my life, but sometimes you just need to know when to take a step back, gain a little perspective, and reevaluate things.
This is not the end for Chef Lindsay! There will be more biscuits down the road in the future. But for now I’m sending hugs and a huge THANK Y’ALL shoutout to Colorado for being a part of this last chapter of my life. It was one of the best chapters and growth I’ve ever had, and I’m looking forward to what’s to come. ❤️🤍❤️🤍❤️🤍❤️
