From the terraced vineyards of Yvorne on the eastern shore of Lake Geneva comes this stunner of a white from Pierre Latine. Pierre practices organic viticulture, and non-interventionist winemaking in a country where that is certainly not the norm. This Chasseslas is tended by hand, vinified without sulfur, and aged on the fine lees for a year in a mix of concrete egg and stainless before being bottled.
Right now this wine is florid with notes of fresh fennel, orchard blossoms, roasted apricot, and almond. Bone dry and light bodied, it’s perfect for a warm summer day spent in the garden or up at Irwin.
Come enjoy it with our bacon bourbon cappelletti, pierogi with braised fennel, and burrata salad.
