Meet your sous chef, Isaac Haag. Three years at Esme, day one at Petite Edith, and the man behind our desserts and raw bar.

When he’s not in the kitchen, Isaac is out foraging, hiking, or on the couch with his girlfriend and dog. Before Chicago he was part of the opening team for a Michelin starred restaurant in Palo Alto, and before that, a pizzeria. Range runs deep.

We put Isaac through This or That. Escargot over oysters, champagne over martinis, caviar over truffle, baguette over croissant, Celsius over Redbull, and dogs over cats, obviously.

Before Esmé and Petite Edith. Before this room had a name. Chef Jenner and Katrina were working at MK Restaurant, at 868 N Franklin, a long time ago.

We ended up two blocks over, in a building that still answers to 868, even though the door says 878.

So we named the Franklin Frites after it. Crisp, double-cooked, truffle aioli. Simple on purpose. Some thank-yous work better quiet.

On Tuesday, September 29, Chef Jenner Tomaska welcomes Chef Joe Cash of Michelin-starred Scoundrel in Greenville and Chef Austin Waiter of Houston’s The Marigold Club for a special Salty Magazine dinner celebrating American Bistronomy.

Together, the three chefs bring their distinct perspectives to a five-course tasting menu created exclusively for the evening.

Strawberry season understood the assignment. 🍓

The Edith Strawberry Salad pairs tender Pink Rhone lettuce from Nichols Farm with peak-season strawberries from Mick Klug Farms, heart of palm, ricotta salata, and a spiced walnut crumble, all tossed in a bright strawberry vinaigrette.

Sweet, salty, herbaceous, acidic, with just enough crunch to keep things interesting.

Summer in the Midwest has a very good argument for itself.
