Finishing up some prep work for another day of serving hot pizza!!! Today I want to showcase these lovely lion's mane mushrooms from Beautiful Edibles Grow (first picture). Every other week I do a pickup from them for these mushrooms for my hot lunches or grab-and-go meals.

For Perry County Pizza Week I cooked these mushrooms in my Greek gyro marinate and they are the alternate topping option to the lamb to make a vegetarian version of my Greek Goddess pizza. Want to make it vegan? Leave off the dill goats cheese curds! The dairy-free tzatziki sauce is plenty creamy enough to sauce the pizza!!!

Our first day of Perry County Pizza Week is complete!!! 28 pizzas sold in three hours!!! Thank you so much to everyone who came out and was patient with us while we got started today!!! I'm on my way to restock on supplies so we can serve more hot pizza tomorrow!!! 12pm-4pm

I stayed up late last night prepping crusts for this Perry County Pizza Week weekend!!! I used King Arthur brand Gluten-free Pizza Flour mix, water, olive oil, active yeast, coconut sugar, garlic powder, oregano, apple c***r vinegar, and salt.

These smelled like a pizza shop all on their own and are safely stored in the freezer waiting to be topped for all you lovely customers!!!

Come out and see us for hot pizza this Friday (12pm-6pm) and Saturday (12pm-4pm)!!

**Take and bake will be available next week while supplies last**

What's the inspiration behind the **Greek Goddess Pizza** I'll be serving starting tomorrow? Leg of lamb from River Forest Farms! At Perry County Grows we have a variety of wonderful products for sale from local people, and this is one we wanted to spotlight! If you've never had lamb before, this is the time to try it!

*Don't worry, there will be a vegan version!!! But I'll do a separate post about my source for the Lion's Mane Mushrooms, so stay tuned!!!

Pizza Week is almost here!!! We're a small operation here at Kelly's Cookery so our hours will be limited. Hot pizza will be served this Friday and Saturday, and cold take-and-bake pizzas will be sold from the cold case next week.

Choice 1: Greek Goddess Pizza
Description: Roasted Pulled Lamb with gyro marinate baked on a pizza crust made with gluten-free** flour with dill goat cheese curds. Topped with a cold salad of red onions, tomatoes, and cucumbers and finished off with a fresh dairy-free tzatziki sauce made with coconut milk and avocado as the base. Make it vegan by leaving off the cheese curds and substituting Lion's Mane mushrooms for the lamb!!!

Choice 2: Classic Caprese
Description: Fresh mozzarella, purple basil, and heirloom tomatoes come together on top of our gluten-free** pizza crust with our from scratch tomato sauce for a fresh take on a classic pizza!!!

**Note on the crust: this crust was made in a shared kitchen and cannot be 100% guaranteed to be gluten-free. We used a gluten-free pizza flour to make the crust as well as purchasing a new pizza stone for this purpose, but it's important to note that if you have a major allergy our kitchen is not certified 100% gluten-free.

About payments: In order to avoid too much traffic at the register I will have a separate line for pizza orders. Cash is preferred, but Venmo and card payments will also be accepted with a small service fee.

Ordering: Come in person or TEXT orders to 812-719-9602. We will confirm your order with a 👍 thumbs up emoji. Expect 15–30 minute wait times depending on traffic.
