Late summer at Boundless Farmstead. We spent the evening walking and talking out there last night, and everything was near its peak.

What we kept appreciating is how dialed in things have come to be. That comes from years of showing up and doing the hard thing over and over. We’ve been working with Boundless, one way or another, since it started nearly a decade ago. Seeing it come into its own has been one of the better parts of this work.

Our success is tied to theirs. When our menu leans harder into certain vegetables, they plant more. When they get a bumper crop, our kitchen works to build around it. They’re planning their season partly around what we need. We’re planning our menu partly around what they grow.

That’s what local sourcing actually is.

The farm sure seems to be thriving right now, and a lot of what’s on your plate is because of it.

Local heirloom tomatoes, Boundless Farmstead little gem lettuce, Hill’s thick-cut bacon, and garlic aioli on toasted Corner Loaf sourdough.

Slow-cooked Zodiac Farms chicken quarter, finished crispy with cherry-whiskey barbecue sauce. Served with roasted Boundless Farmstead carrots, pickled rhubarb, and garlic yogurt.

We’re excited to partner with Zodiac Farms, a Central Oregon farm committed to raising high-welfare chickens on pasture where they can exhibit their natural foraging behaviors.
