Portofino is back– Chef Anthony Cerrato’s take on a cioppino and named for Italy's gorgeous northwestern port city, to which Chef has direct family ties. Rustic cuisine from Piemonte is defined by restraint, seasonality, and a respect for what the land and water provide. In a region better known for rich meats, truffles, and bold reds, trout offers a quieter but equally expressive centerpiece. Preparation leans simple: grilled over wood, lightly cured, or pan-roasted with butter, herbs, and a squeeze of lemon, allowing the fish’s clean, mineral character to hold its ground.

Around it, the plate stays grounded. Greens, mushrooms, a little fat, fresh veg, or a splash of sharp local vinegar cuts the richness. Nothing is overworked. The cooking reflects a rural logic: use what’s fresh, waste nothing, and let technique stay out of the way. The result is food that feels both humble and precise.

Our iteration, the Trout Piemontese, features pan-seared sunburst trout, roasted fennel, cherry tomatoes, arugula, lardons, hazelnut-bacon vinaigrette, and a cannellini bean puree.
