Available in 60 or 120-minute sittings, it's a lunch designed for generous tables, good conversation, and uninterrupted moments above Victoria Harbour.

A great sauce can define a dish. For the Japanese Eggplant Dengaku, Chef Iwahashi prepares a yuzu miso sauce that balances richness with a gentle citrus lift, complementing the soft texture of the eggplant and the subtle sweetness of ginkgo nuts.

Shaped by traditional Japanese techniques, this dish is presented through aqua’s culinary perspective.

Memorable evenings often begin with a table set for two. This Chinese Valentine’s Day (Qixi Festival), aqua presents a special menu for 19 August, celebrating the occasion through thoughtfully prepared dishes and uninterrupted harbour views.

Homemade Potato Gnocchi with Red Prawns and Fresh Zucchini captures Chef Romeo’s approach to Italian cooking, with each gnocchi carefully shaped by hand before meeting the sweetness of red prawns and fresh zucchini. Reservations are now open.
