Created exclusively for the season, Peach Amber is a refined dessert that brings together the delicate sweetness of white peach and the elegant aroma of Earl Grey tea.
At its heart are succulent seasonal white peaches, gently poached to preserve their natural fragrance and tender texture. Resting above is a layer of peach gum delicately infused with Earl Grey, its crystal clear, amber like appearance complemented by a pleasantly chewy texture and subtle notes of bergamot.
Crowning the dessert is a scoop of chilled white peach cheesecake ice cream, whose creamy richness perfectly balances the fruit‘s refreshing sweetness.

Each clam is cooked just until perfectly tender, locking in its succulent juices while maintaining a delightfully springy texture. Wrapped in crisp aburaage (fried tofu skin), the clams are finished with finely grated bottarga, adding a rich, savory depth that elevates the natural umami of the sea.

Following the overwhelming response to our first three evenings, we‘ve received countless requests for another seating. To thank everyone for the incredible support, we’re delighted to announce an additional date on July 31 (Friday).
On the final evening of July, our chef will once again showcase the rich sweetness of premium Hokkaido uni, thoughtfully paired with Japan‘s finest summer ingredients. Refreshing yuzu, chilled dashi jelly, and the freshest seasonal seafood come together in a refined tasting experience that is both elegant and refreshing.
This will be your final opportunity to experience our limited edition July Uni Feast before the season comes to an end.
