We made a delicious red pepper & courgette frittata from the lovely larder surplus vegetables. I am adding the recipe for anyone who fancies giving it a try....
Whisk 3 large eggs, 1 tablespoons milk, salt, and pepper.
Sauté 1/2 diced red pepper, 1/2 sliced courgette and fry 1 tablespoon olive oil until soft. Pour in eggs, top with cheese, and bake at 180°C (350°F) for 10 minutes. Enjoy!
