CELEBRATING LIFE & CAKE ✨…

Buttermilk chocolate cake with coffee meringue cream and a little splash of booze 🤎

It’s a good Sunday to celebrate being part of since the pandemic. What started as a fun get together of like minded happy bakers on a Sunday afternoon has become part of my life since and I can honestly say I’ve met some absolute gorgeous humans on here 🤎

It’s a bit of a double celebration as I also finished my last chemo (I hope) and it’s Breast cancer awareness month…

The PERFECT bite size…

Delicious, healthy crunchy chocolate fruit bliss balls!

Made these a few weeks back to use up bits and bobs and I just so happened to be meeting up with Sharon Cosgrove Photography for a catch up and I usually don’t go empty handed.
So when I arrived we decided to have a play in her new studio.

One of my favourite bakes…

This is an eight layered Spartak Russian Cake for today’s theme layers!

Layers of thinly baked chocolate biscuit cake sandwiched together with a soured cream slightly sweetened with local honey, topped with a rich chocolate ganache and surrounded by a biscuit crumb (made with the off cuts).

Surprisingly light and best served with a drizzle of sweetened honey cream.

Just hand me the spoon…

Rolling, rolling, rolling…

A simple savoury dish for this weeks mustard theme for

SPICED YOGHURT ROLLS

A soft yoghurt dough made with whole meal flour with pops of toasted mustard seeds.
Filled with homemade Brinjal pickle which was my first Great Taste award winning preserve back in the day and one I still make for friends and it also has mustard seeds in it!

Served warm straight out of the oven or on the side with a big bowl of warming stew.

Deliciously spicy and perfect for sharing!

As autumn slowly descends upon us and nature continues to give us seasonal fruit, it’s time to make the most of what it has to offer.

PLUMS have been great this year and a cosy bake is just what’s needed to show them off.

PLUM & WALNUT Upside Down Cake with maple 🍁 yoghurt…

Delicious sweet plums, coated in Demerara sugar before the cake mix, using wholemeal flour, yoghurt and walnuts is placed on top before baking.

Turned out and served with maple syrup sweetened yoghurt.

I’m not very patient when it comes to making BREAD plus at the moment I can’t tolerate some textures due to my ongoing chemo treatment!

These simple Italian TIGELLE rolls are just perfect. Yeast based and proved twice before being baked on the griddle. Similar in texture to soda bread or stotties, perfect for meat & cheese sarnies or simply slathered in butter straight from the pan.

As I was in the mood I decided to make some chilli, cheese & onion rolls. These are made again with yeast and kneaded, proved three times before shaping and topped. A fabulous way to add extra flavour to a sandwich roll or to accompany a big bowl of soup now we are heading into cooler weather!

Both are simple to do with little preparation just a little time is needed for proving!

Well I just couldn’t resist making these POWDER PUFFS…

These light as air, sponge biscuits are the perfect vessel to carry lightly whipped cream with a hint of exotic rose water, home made raspberry jam and a few fresh ones squeezed in for good measure!

Dusted generously with powdered sugar to finish just before serving!

As the season begins to change this is the perfect bake for the end of summer, light, fresh and incredibly delicious!

Recipe is from Sweet cookbook by Helen Goh & Yotam Ottolenghi so pleased Helen discovered these in Australia so I also could discover them!

Today’s theme is cream for so no messing just showing our wonderful Irish cream off!

It was definitely a gentle day here and no better way to celebrate than with a slice of cake!

BLACKBERRY & PEAR cake with Irish wh***ey cream, from the gorgeous Cherie Denham Andrew Montgomery from their second book together THE IRISH KITCHEN p250. Both books bring exceptional uncomplicated traditional Irish baking into your home.

NB: I did replace the pears for apples as I had them in house and I’m on a no waste initiative!

Soft, moist texture with delicate hints of freshness popping through from the blackberries and the zingy warmth of wh***ey cream to waken the palate.

ABSOLUTE winner and perfect for heading into autumn 🍂

BROWN BUTTER BISCOFF CHEESECAKE…
with caramelised nectarines!

Deliciously buttery vanilla & brown butter crumb filling with a crunchy biscoff biscuit base and just because we love butter so much a few caramelised nectarines on top for good measure!

Sensational nutty flavour balanced with the tartness of the fresh nectarines.

DARK CRUNCHY CARAMEL SLICE…

My version of millionaire shortbread for this weekends traybake theme for

Chocolate shortbread base, crunchy sweet caramel with kataifi strands, topped with dark chocolate makes the perfect sliced treat. Feathering optional.
