Meet our newest limited edition coffee: Hermoso

This lot comes from Edwin Noreña of Finca Campo Hermoso in Quindío, Colombia. An agricultural engineer, biotechnologist, and fermentation wizard, Edwin has earned the nickname El Alquimista (The Alchemist). One sip and you'll understand why.

The process behind this coffee is anything but ordinary. After harvesting, Edwin extracted a rich, sugary liquid from the coffee cherries called the must. He then used that must alongside dried peaches during a second fermentation, infusing the coffee with layers of stone fruit sweetness before honey processing and slow drying.

A lot of work. A remarkable result.

We've blended this co-fermented lot with a washed Colombian coffee to keep the peach notes front and centre without overwhelming the cup. The result is expressive, balanced, and surprisingly easy to drink every day.

Expect notes of ripe peach, peach black tea, jasmine, and a candy-like sweetness that lands somewhere between a fruit gummy and a creamsicle.

Side Mission #2 is in the books, and what a day for it. This time, we hiked all of our brewing equipment to the upper lookout on the Terrace Mountain hiking trail. Accessible by foot via various routes or by bike using Griff's, the lookout sits at about 370masl, and on a clear day, the views are stunning.

Our goal for these missions is simple. To share coffee in cool places with cool people. Y'all keep showing up, so we're going to keep doing them. Maybe the next one will be a little easier to get to ... maybe ...

Apollo 7 was the first mission to include a specialized hot water dispenser. Before this, astronauts were restricted to room-temperature, powdered, and freeze-dried coffee that was shaken in plastic bags and consumed through straws.

Thanks to this new addition, coffee was included in the first meal ever eaten on the moon (or—depending on your personal beliefs—on a Hollywood soundstage 🤣).

New to Chemex brewing? Here are some ideas on where to start—of course, always trust your tastebuds, your way wins!

Here's the deets on brewing using a Chemex:

1. Prep the brewer and water
Fill a kettle with water and heat it to just off the boil. Place a Chemex filter in the brewer. Rinse the filter with hot water to preheat the brewer; discard the rinse water.

2. Measure and grind the coffee
Measure 42 g of coffee—as a starting point—and grind it medium-coarse, similar to kosher salt. Add the grounds to the filter and gently shake to level the bed.

3. Bloom the coffee
Start a timer and pour 150 g of hot water—again, just a starting point—over the grounds, making sure all the coffee is fully saturated. Stir gently, then allow the coffee to bloom.

4. Continue the pours
At 0:45—or when you prefer—begin the second pour with a gentle wiggling motion, followed by a slow spiral, bringing the total water weight to 450 g, or until the water level is close to the rim. At 1:45, continue pouring until you reach 700 g of water or the slurry sits roughly level with the top of the Chemex.

5. Finish brewing and serve
By around 4:00, the brew should be close to finished and yield about 20 ounces, marked by the glass bubble on the side of the Chemex. Carefully lift the filter and allow any remaining coffee to drain before discarding it. Give the Chemex a gentle swirl, then serve and enjoy.
