Today our team spent the day out in Didsbury visiting two farms that contribute to our menu: Trafford Farms and Deepwater.
At we stepped inside their indoor mushroom farm. Rows of blue and pink oyster mushrooms, chestnut mushrooms, and lion’s mane growing in controlled environments. These mushrooms make their way onto plates and bringing texture and earthiness we love.
We toured the hydroponic greenhouse, where kale, basil, Swiss card, arugula and other vibrant greens thrive year-round.
Huge thank you to Charlie, Paul, Mike and the entire team for welcoming us, sharing your craft and reminding us how much care goes into every ingredient before it reaches our kitchens.

We’d like to introduce you to Jessica Stapley, ’s Chef de Cuisine, leading the kitchen since October. Chef Jessica brings vibrant energy and refined technique to our new menu.
A SAIT Culinary graduate, her journey includes some of the city’s most respected kitchens, including Pigeonhole, Model Milk, and most recently , where she worked closely with Executive Chef Kristen Livingston focusing on sustainability and Alberta’s incredible producers.
Known for her bubbly, passionate leadership style, Chef Jessica believes food is a universal connector, creating moments of joy, meaning and togetherness around the table.
We’re excited for this next chapter and can’t wait for you to experience the creativity and care she brings to every plate.
