Sugar pumpkin kale salad. Our current winter feature at Nupo, here for a limited time. 
Head chef Tay roasts the sugar pumpkin with salt and olive oil, then tempura fries it. It’s paired with deep fried kale, ice onion, pickled shallots, a drizzle of honey and goat cheese for creaminess and a little sweetness at the end. Yuzu leek dressing brings the acidity and freshness, and togarashi adds a touch of heat to finish.

Tuna season brings back a few favourites, and this one returns with a fresh take. PEI bluefin tuna tartare. Pickled ramp, leek oil, kinome. Served with a nori tapioca chip on the side, for an extra hit of umami and crunch.

A 564lb bluefin tuna, caught off the coast of PEI, arrived at Nupo within 48 hours of being pulled from the water.

Chef Darren MacLean gathered chefs from Nupo, Eight, and Shokunin around the fish to walk them through the breakdown himself, piece by piece, showing technique and explaining what each part of the fish is meant to become.

Some cuts are served fresh tonight. Others have been set aside to age over the coming days and weeks, developing in flavour and texture. 
This tuna will move across two menus, at both Nupo and Shokunin, in the days ahead. Reserve to experience the freshest tuna available.
