✨️ Same dough.
Each one however, behave differently.
The sugars in the Beetroot Pump up an open crumb while the fibrous activated charcoal (coconut ahes) has an higher absorption.
The result?

In the bite.

✨️"We’ve been told that acidity is the badge of a great sourdough, but who set that standard?

We’ve been told that sourdough is a symbol of health and tradition, but we do it because we’re told, not because the sour is what makes it healthy...

Fermentation is a delicate dance: the amino acids break down sugars, yeast emerges, as a consequence of yeast feeding from sugars = alcohol.

Alcohol develope that sourness. But does it have to? So controlling the fermentation prior even thinking about adding flour is the real goal. On my humble opinion.

I think it’s in that precise balance, with no overfeeding, no forced acidity, that we craft bread that sings.

In short, sourdough is the label we use to indentify a natural process..

We keep the healthy approach, not the sour bite, by starting with fermentation.

✨️We have met in a Facebook group.

Meet Donna.
She runs " The Comfort Bowl"

Her mission is to help those in need to get back on their feet. Is an honourable thing to do, and I couldn't be happier in my little word to contribute to this case.

There was probably enough bread to feed 50s.

Isn't much, but it means a lot to know that will get to empty bellies, and if isn't, will definitely land in the hands to those who need it the most.

Let's pause for a sec, next time we are gathering the family over a table, and think.. how luky are we to have the privilege to complain about bills, cost of living, etc etc.. we are doing much better than some.. so be thankful for what you got.

✨️Fatherhood is bigger than being a dad.

It’s the things you carry forward without even realising it. The strength. The stubbornness. The values. The way you stand when life tells you to sit down.

If I am the man I am today, much of it started with my father, and grandfathers

For the lessons they taught me, the ones that never had to say out loud, and the parts of them I carry with me every day...

And now I understand that fatherhood isn’t about being perfect.

It’s about leaving a legacy behind in your children life that gives them strenght to go through it when you’re no longer standing beside them.

Happy Father’s Day to all the fathers out there, standing tall for the new generation. ❤️
