At the heart of Five Spice is Kevin’s approach to food: balance, flavour and letting great ingredients speak for themselves.

As Executive Chef, Kevin leads the culinary team behind Five Spice, bringing together his experience, creativity and an appreciation for the produce of the Top End to shape what arrives at the table.

Low heat. Plenty of time. And a little patience behind the scenes.

Our slow-cooked duck takes its time for a reason — allowing the flavours to develop while the meat becomes beautifully tender.

A little throwback to a very special night at Five Spice. 🐟

For NT Seafood Month, we had the pleasure of bringing Australia Bay Seafoods and Five Spice together for an evening dedicated to one incredible local ingredient — Saddletail Snapper.

From seeing the fish prepared up close to hearing the story behind the catch and experiencing Chef Kevin Chen’s take on snapper across the evening’s menu, it was a night that celebrated the people, produce and flavours of the Northern Territory.

A big thank you to everyone who joined us for our Australia Bay Seafoods Snapper Dinner, celebrating NT Seafood Month.

It was a pleasure to bring together our guests, the Australia Bay Seafoods team and Chef Kevin Chen for an evening celebrating the incredible seafood we have right here in the Northern Territory — from learning more about the journey of the catch to experiencing snapper across a specially curated menu.

Most of all, thank you to everyone who shared the table with us and made the evening such a special one.

Join us at Five Spice for the **Australia Bay Seafood Snapper Dinner**, a special five-course dining experience celebrating premium NT snapper as part of NT Seafood Month.

Chef Kevin Chen will take you through five courses, from cured snapper crudo to chargrilled snapper with stuffed squid, all paired with premium wines.

You’ll also have the chance to meet the fishers behind Australia Bay Seafoods and hear the story behind the catch.
