Meet the Team: Darsh, Food & Beverage Manager

Hello, my name is Darshan, but you can call me Darsh. I recently moved to Darwin from Canada, where I spent the last 8 years living and working.

I hold a Hospitality Management degree and a WSET Level 2 qualification in Wines. Throughout my career, I have worked in fine dining restaurants and premium bars, developing a strong passion for delivering exceptional guest experiences. Prior to this I held a leadership role in Fairmont Hotels and Resorts in the Canadian Rockies.

What I enjoy most about hospitality is connecting with guests and creating genuine interactions. Every day brings something different, which is what makes this industry so rewarding and exciting for me. Outside of work, I enjoy binge-watching TV shows, exploring new food and wine experiences, and spending quality time with my wife. I am excited to be part of the journey at Salted Egg Darwin and look forward to contributing to the team's success while creating memorable experiences for our guests.

You may notice the stunning woven pendant lights as you enter through the hotel side of Salted Egg.

Handcrafted by Larrakia artist Lorraine Williams using traditional weaving techniques and locally sourced natural materials, the pieces bring a subtle connection to Country and the Top End into the space. A small detail that adds so much warmth and character to the restaurant.
