Frédéric opens the Kooyong Classic. Day one of three, Our kitchen, the Racquet Club and four courses.

It starts with Ch*****ne on arrival with a light beetroot and goats cheese tart. Then something bright. Kingfish, citrus, cumquat. Then the main event. Lamb shoulder, caramelised. A strong finish with chocolate. Bittersweet, with sour cherry.
