𝗦𝗙𝗘𝗘𝗛𝗔, a dish of many variations and just as many memories.

At Albi, it’s spiced lamb, baked in our wood-burning oven, then served with a dollop of toum + a za’atar dusted lemon. A tribute to ’s roots, and early memories in his grandmother’s kitchen.

Every seat at Albi tells a different story. Tables alternate between walnut and oak; banquettes are wrapped in linen, wool, or leather.

Nothing matches perfectly by design, a quiet nod to spontaneity, playfulness + the layered way Chef Rafidi cooks 🔸

Our version of Kibbeh Naya starts with hand-chopped 𝗦𝗛𝗘𝗡𝗘𝗡𝗗𝗢𝗔𝗛 𝗟𝗔𝗠𝗕, surrounded with sumac onions, garden goodies, ferments, pickles + a dollop of toum.

It’s a faithful nod to a classic arabic dish, recreated with care + a respect for ingredients + layered simplicity 🧡

For the first episode in this year’s Sofra Series, we welcome Chefs and of Michelin-starred . Tickets are live now via !

Since opening in 2020, Kasama has become one of the most talked-about restaurants in the country. The couple behind it – Chef Tim Flores, a Chicago native with roots in the Philippines, and Chef Genie Kwon, an acclaimed pastry chef originally from New Orleans – have built something singular: a modern Filipino tasting menu inside a neighborhood bakery.

Their work at Kasama has long inspired us at Albi, and we couldn’t be more excited to welcome them into our space on Monday, April 22. Expect a unique exploration of the possible connection points between Palestinian and Filipino cooking: smoke, spice, umami, freshness, and sweetness – plus an epic pastry collaboration.
