Chef Karim ElKady’s Hamachi Crudo is the kind of dish that reveals itself slowly — bright and delicate at first, then increasingly layered with fruit, acidity, heat, and texture.

Hamachi, the Japanese name for young amberjack, has a rich, buttery quality that makes it a beautiful counterpart to the sharper, more vibrant elements on the plate. Karim builds the dish around aguachile, making his with fresh cantaloupe juice, lemon, garlic, and Fresno pepper. The result is a balance of natural sweetness, clean acidity, and a gentle heat that never overwhelms the fish.

Melon appears throughout the dish in different forms. Fresh cantaloupe becomes the base of the aguachile, while compressed spheres of cantaloupe, honeydew, and watermelon bring sweetness and texture. Watermelon is transformed once more into a delicate jelly, giving the plate another expression of summer fruit.

Jalapeño gets the same thoughtful treatment: freshly julienned for crispness and bright heat, then again as a smooth gel with a more concentrated flavor. Fresh basil brings an aromatic sweetness, while toasted coriander adds warm citrus notes and a subtle nuttiness that pulls everything together.

As the afternoon fades into evening, Santacafé takes on a rhythm all its own.

The garden glows beneath late-summer blooms. Champagne is poured with quiet ceremony. The bar becomes a gathering place before dinner, while the dining room welcomes guests settling in for an unhurried evening of exceptional food, thoughtful wine, and warm hospitality.

The menu continues to evolve, with Chef Karim ElKady’s first seasonal dishes already making their debut, each reflecting a thoughtful approach to the ingredients of the moment while honoring everything guests have long loved about Santacafé.

Karim’s Burrata may read simply on the menu, but there is so much happening behind those five ingredients.

At the center is cow’s milk burrata, with its mozzarella exterior giving way to that rich stracciatella center of sweet cream and shredded mozzarella. From there, Chef Karim ElKady builds the dish around contrast—richness against freshness, softness against crunch, and bright herbs against deeper, savory spice.

Dill appears in two forms: freshly picked and in a house-made dill oil made with fresh dill, garlic and olive oil. Dry-cured black olives are finely minced and scattered over the burrata, bringing concentrated salinity without overwhelming the cheese.

The cucumbers are treated just as thoughtfully. Thinly sliced and lightly macerated with mirin and rice wine vinegar, they aren’t meant to become pickles. Instead, the preparation gently seasons them while preserving their crisp texture and clean cucumber flavor—a cool, fresh counterpoint to the creamy burrata.

Then comes the crunch: a house-made crumble of fried garlic and toasted panko breadcrumbs, adding roasted garlic flavor and texture to every bite.

And finally, the Mole Seco. Karim’s dry finishing spice is inspired by traditional mole and made with cocoa nibs, ancho chile, chipotle chile, walnuts, pecans, sesame seeds, cumin and aromatic spices. It brings subtle heat, nuttiness, earthiness and just enough bitterness to balance the richness of the burrata while tying back into the herbs and cucumber.

It’s the kind of dish that looks effortless when it arrives at the table, but every element has a reason for being there.

An unforgettable evening in support of Reunity Resources Farm & Compost!

Thank you to everyone who joined us for this special dinner and helped make the evening such a success. We are grateful to Reunity Resources, COYOTE CAFE & CANTINA , and Santacafé for bringing the community together around a shared purpose and for the incredible work they do year-round to strengthen food access, environmental resilience, and community connections throughout Northern New Mexico.

It was an honor for Chef Dakota Weiss, Chef Karim ElKady, and Pastry Chef Mirna Romero to collaborate on a menu created especially for the occasion. Thank you to Glorieta Pines for the music, the local artists who generously donated their work, and every guest whose generosity helped support Reunity’s mission.

A special thank you to Sam Ruble of Sam - Visual StoryTeller, Photographer, Social Media Manager for beautifully documenting the evening through photography and video, preserving the stories, connections, and moments that made this event so memorable.
