Anatolian Morning Eggs
A Turkish-inspired breakfast dish featuring fried eggs over creamy herbed yogurt, finished with warm chili butter and served with crispy toast.
Ingredients
* 1 cup Greek yogurt
* Salt & black pepper, to taste
* Pinch of garlic powder
* 2 tbsp chopped green onions
* 1 tbsp chopped parsley
* 2 eggs
* 1 tbsp butter
* Pinch of cayenne pepper or red chili powder
* Crispy buttered toast, for serving
Instructions
1. In a bowl, lightly whisk the Greek yogurt with salt, black pepper, garlic powder, green onions, and parsley until combined. Spread onto a serving plate.
2. Fry the eggs to your preferred doneness and place them over the yogurt mixture.
3. Melt the butter in a small pan and stir in the cayenne or red chili powder. Drizzle the warm chili butter over the eggs.
4. Serve immediately with crispy buttered toast.
