Brazil Sample: Round 2 🇧🇷☕️

We took Brazil back to the roaster! Tried a slightly darker roast in hopes of bringing out more of its flavor.

It definitely has a more complex and brighter presence this time around.

But will it make the Ruach roast cut? We think it’s a strong contender. We’ll consult our expert, keep experimenting, and keep y’all in the loop!

We used to full time missionaries - working together to mentor, encourage, and share Jesus with college students. Transitioning from full time ministry to the “regular” workforce was…weird.

Why are we doing this coffee thing? Because it speaks to our hearts, it’s bigger than us, involves more people than us, and is an opportunity to partner with what God is doing in all over Africa among their universities. AND we get to do this thing together again.

First taste of the Brazil sample 🇧🇷☕️

We roasted it. We let it rest. Today, we finally cupped it.

First impressions? Sweet with some really nice nutty notes. The first roast was good, but we think there’s more hiding in this coffee.

Seth’s take: take the next roast a little darker and see what else we can pull out of it.

And that’s part of developing a new coffee! We don’t want to judge it from one roast. So back to the roaster we go. 🔥

New coffee sample?? 😮😮😮

Picture this: It’s 2007, You’re Zach Bowling, sophomore in college, living with a few other guys in an apartment in Garden City, Kansas. (Got the visual?)

One day you step out of your room and there’s a stranger sleeping on your couch. 🛋️ He turns out to be pretty cool and hangs around until graduation.

The stranger (now friend) graduates and moves back home- to BRAZIL! (See the dots connecting?) Literally 20 years later, that same stranger (friend) hooks you up with some pretty great Brazilian coffee 🫘

Community is great like that! We are excited and thankful to try out these beans to see if they could be the next roast for Ruach.

The beans are roasted and resting. Next up: cupping!

Coffee beans actually pop. 🔊

This is ‘first crack’ and it’s one of the most important moments we listen for while roasting.

From first crack, you’re learning where the coffee is in the roast and entering the development phase. The timing, intensity, and progression of the cracks, combined with bean temperature, rate of rise, aroma, color, and everything else you’re observing, help you judge how the roast is developing and when you may want to drop it.

Roasting isn’t just watching a temperature number. Sometimes you have to listen to the coffee too.

Yes, the slurping is actually necessary 😂☕️ And a little shocking the first time you hear it!

When cupping coffee, slurping helps aerate the coffee and spread it across your palate, making it easier to pick up aroma and flavor.

So next time someone gives you a weird look for slurping your coffee… just tell them you’re evaluating it.
