Meet this month’s special: Beef Cheeks with Red Chimichurri❤️‍🔥 We start with a simple salt, pepper, garlic rub, smoke them for 4 hours, then cook them confit-style in beef tallow for another 4 hours until they’re rich, tender, and packed with flavor. Finished with a bright red chimichurri and sliced to serve🔥

BUT… tomorrow is National Brisket Day (May 28) and we decided rules can be bent for a holiday this important🫱🏼‍🫲🏽🔥 For this week only, we’re bringing the brisket out on THURSDAY too!
