We had the pleasure of cooking for the Carnegie grand opening in Yreka, and this was the kind of event that needed movement.

Passed appetizers, a live carving station, sliders, a harvest table, hot fries, and chocolate strawberry cups for a sweet finish—all built around local beef, pork, and products from Siskiyou producers.

This is the kind of catering we love: generous food, action stations guests can move through naturally, and a team keeping the whole experience calm behind the scenes.

Chef Daniel was out at Redding Farmers Market looking for what should guide the next menu: fresh herbs, produce with a little snap, and ingredients that make a plate feel tied to the season. Here’s a look at a recent 4-course tasting menu we prepared live on-site for a private event:

🍉 Watermelon Salad
Arugula, pistachio pesto, whipped feta, aged balsamic, and fresh mint.

🐟 Spiced Pecan-Crusted Black Cod
Cauliflower purée with honey sriracha beurre blanc.

🦆 Crispy Duck
Served over crispy ginger rice with yellow pepper purée and red basil curry emulsion.

🍫 Chocolate Mousse Cake
Made with local chocolate and finished with strawberry compote.

We love bringing elevated food and thoughtful presentation to weddings, private dinners, and special events throughout the North State.
