HAVE YOU SEEN THIS MAN?

If you’ve dined with us at all over the last three years, chances are pretty high you’ve encountered Josh. He has been with us since the earlyyy days. So early, in fact, that he’s a huge piece of the foundation of the bar we have today!

But alas, all good things must come to an end…

Josh is shaking up his last margarita with us next week, and although we’re sad to see him go, we know he’ll continue shaking up the world around him in the many ways he deems necessary (probably through really cool art & really strange jokes).

Stop in and bid him adieu before his streak comes to an end. Duolingo don’t worry…we mean at the bar, not his Spanish lessons.

Josh, the team will miss you and the custom art you are constantly leaving around the staff area, too. Always drawing, always creating, always adding a little more life to the bar.

We wish you the best in whatever comes next, Josh Duff 💚

Whole Branzino en Alguashte 🐟

This is a whole fish situation built around alguashte, a traditional Salvadoran sauce made from ground pumpkin seeds that’s deeply nutty and savory. Around it: smoked cherry tomatoes and sweet Pennsylvania corn.

A little Salvadoran, a little Pennsylvania summer.

Desayuno típico salvadoreño, the typical Salvadoran breakfast plate. ☀️☁️

Scrambled eggs with tomato, onion, casamiento, fried plantains, garlic crema, avocado, Pleasant Lane Farms feta, tortillas.

The casamiento, which literally means “marriage,” is rice and refried beans cooked together with sofrito. My mother’s recipe, just very flavorful! ♥️

There is a lot of things I could say about this plate being a “typical” Salvadoran breakfast, but mostly I just wanted to make something that tasted familiar.

Swipe to see little Chef Marcella & read more about why this dish is so important to her & our menu ——>

I spent a lot of time in El Salvador when I was younger! Some of the food I remember most clearly is food that is not particularly complicated. This is one of those plates where none of the individual components need much explanation.

The point is really how they all get eaten together. A little egg, casamiento, plantain, avocado, crema, & cheese all scooped up with a tortilla. And then repeat….

The feta is obviously not queso duro. We are using cheese from Pleasant Lane Farm instead, mostly because it’s just really really good.

The produce isn’t necessarily coming from El Salvador & the kitchen is in Pennsylvania.

So, with all of that being said….

It’s not trying to recreate a plate exactly as it exists there. It’s more like taking something that I grew up eating and letting it exist here & now. 🥹

A couple weeks ago, while the rest of us were doing whatever it is we do at Duo’s, Selyn started working on a new michelada!

Selyn brings some experience with her from working at a cervecería in Guatemala, where apparently the michelada is allowed to be an event. 🇬🇹🙂‍↕️

So…she started messing around with b**r, tomato, lime, spice, and chamoy, eventually landing on something fun!

We like when people bring things with them. Their experiences, the places they’ve worked, the things they grew up drinking and eating, the weird little details that make something feel like theirs.

Anyway, micheladas….

Selyn’s version is cold, spicy, salty, messy, a little over the top, and very good.🍺🍅

Corn season is upon us, and elote is a classic way to celebrate it! 🌽

Sweet summer corn from , brushed with garlic crema, buried under cotija and a cave-aged goat cheese from FireFly Farms Creamery , then finished with a crunchy salsa seca that sneaks up on you.

By the second bite, it’s impossible to pretend to be polite, which is exactly how elote is supposed to be.
