Back when we were a food truck, we were interviewed and asked what Phoenix Coqui was all about. The answer we gave then [next slide ➡️] was the same as it is today.

Looked around the restaurant this afternoon and saw families, friends, birthday celebrations, customers who have been riding with us for years, and people walking through our doors for the first time. All of them laughing, eating, connecting.

The food is the centerpiece. But what you see here, THIS is the whole point.

Gracias to everyone who makes this place what it is. For bringing the magic day in and day out. We don't take it for granted.

We will be CLOSED this Thursday, March 26th! Our whole team has been tapped to prepare and deliver lunch for 1,500 people at a local company's employee appreciation celebration, and we are beyond honored to be part of it.

It's hard to believe 4 years ago today we opened the doors to our very own brick and mortar!

Here are some BTS photos of the days leading up to opening, proof that we didn’t build it alone.

Friends and family showed up with paint rollers, tools, ladders, and open hearts. They patched walls, cleaned floors, moved equipment, and helped us transform a raw space into what is now Phoenix Coqui.

We shared home-cooked meals, beers and laughs. Everyone contributed in their own way. That’s what community looks like.

Four years later, we’re proud. Proud of how far we’ve come. Proud of every team member who has been part of this journey. Proud that we didn’t just survive the first four years, we grew through them.

The restaurant industry is tough. The odds are real. But so is the power of people who believe in you.

To everyone who picked up a roller, shared a post, stood in line, or simply cheered us on, this anniversary belongs to you too.

And we’re still building...
