The fourth halo halo in our exploratory series is a vibrant homage to a classic Filipino flavor, pandan. In Filipino culture, pandan is a traditional and deeply comforting flavor. Often called the sister to ube— and she is stunning— pandan carries a fragrance that’s softly sweet, a little nutty, and beautifully unique. It is one of those flavors that’s hard to describe and truly impossible to imitate. For Filipinos, it transports us to special family gatherings (like birthday parties) and memories of simple everyday moments like merienda (our snack time).

Our take pairs pandan with coconut (two flavors often found together in Filipino cuisine). Youll find a halo halo layered with macapuno, housemade pandan jelly, brown sugar crystal boba, coconut nata de coco jelly, and crunchy cereals over pandan milk and shaved ice. It is finished with a scratch-made coconut tuile cookie bite, a traditional wafer stick, then topped with two scoops of creamy buko pandan ice cream.

Our namesake flavor, Sampaguita, took a lot of planning, reflection, and feeling. It needed to live up to its literal name (jasmine), carry the meaning of “I promise you,” and also stay grounded in a core memory of my life. I wanted a flavor that felt as gentle and meaningful as the promise of sampaguita: something delicate and comforting. I also wanted something uniquely captured in ice cream like never before yet still familiar to the palate.

I thought of a dessert my mom used to make for me as a kid: a milky jelly with almond essence and lychee fruit (specifically from a can), mixed together with ice cubes. I knew I wanted to capture this memory in ice cream. This flavor is especially meaningful to me as it represents maternal love, one of the first and most profound loves we experience in life.

With every scoop, I hope you taste the love and intention behind it

Over the next year, we’ll be sharing each of our flavors and the stories they carry. Some are rooted in childhood memories, others are inspired by timeless flavors of our heritage, shaped through the lens of the Filipino-American experience. All are created to bring people together and celebrate the spirit of the Filipino. We begin with how we named our store, and the creation of our namesake flavor, Sampaguita.

“Sampaguita” comes from the words sumpa kita or “I promise you.” To us, it’s a promise of love, memory, and everything that brought us here.

This is our story, our roots, and our why, and it became our very first flavor: a delicate blend of milk, almond, lychee, and jasmine, inspired by a childhood dessert, and a mother’s love.

Hi 👋 We’re Marie and Mo, the owners of Sampaguita.

We’ve been a couple since 2014 and we opened our first business, The Greenery Creamery, together in 2018. This is how we feel about working together:

Marie: “We are two sides of the same coin. We work really well with each other and fill in each others gaps. I get to experience the highs and lows of life and business with one of my favorite people. He gets it; he gets me. Not everyone can have (or wants) that dual relationship. We have intense trust in each other to carry out responsibilities.”

Mo: “It’s fun”

The next halo halo in our exploratory series features a halo halo inspired by Milo Dino, a popular Asian malted chocolate dessert. Layers of shaved ice with house-made oolong boba, rich chocolate jam, and condensed milk, topped with flan, Oreo, crunchy Cocoa Puffs, a crispy wafer stick, a dusting of Milo powder, and vanilla soft cream.
Our scratch-made oolong boba starts with carefully infused oolong tea (known for its naturally smooth, aromatic, and floral flavor) into tapioca. We craft our boba pearls in-house and cook them daily to achieve a balance of tenderness and chew.

Our new Sampaguita Halo-Halo Series celebrates this Filipino spirit of creativity, adaptability, and tradition by introducing a fresh perspective with each release.

Along the way, we’re also exploring the idea of “authenticity” challenging the notion that there is only one true way for something to be real or valid, when in fact, authenticity lives in the diversity of stories, hands, and histories that create it. This month our seasonal specials focus on green aromatics in celebration of spring 🌺 🌹

Oolong Milk Tea Shake
Oolong tea has a warm, toasty aroma with natural notes of caramelized sugar, and roasted nuts. Blended into a creamy milk tea shake, it becomes velvety and indulgent while still letting the tea’s subtle floral and nutty flavor shine through. We top it with a cloud of light and creamy pinipig rice foam for the subtle scent of grass and young rice.

Sampaguita Green Thai Tea Float
This delicately floral drink is made with sampaguita (jasmine) tea and paired with green thai tea (the sister version of the traditional orange and red Thai tea everyone knows and loves). Mixed together, it creates a blend that’s gently floral and grassy with subtle notes of vanilla. It is then layered with brown sugar crystal boba and topped with a swirl of vanilla soft cream for you to mix and balance the tea to your liking.

Designed by our incredible pastry chef , the second halo-halo in our exploratory series is inspired by mango sticky rice. This version leans into rice as more than just a base; it is featured as scratch-made toasted jasmine rice granita, toasted rice powder, and crisp elements that bring contrasting textures and temperatures to complement the richness of mango and coconut. The halo halo is then layered with sesame seeds, sweet red beans, mango chunks, mango boba, macapuno, nata de coco, palm fruit, jackfruit, shaved ice, cereal, and finished with mango sorbet and coconut ice cream scoops. Each bite is meant to showcase a new element.
