WTF IS THE SIESTA MENU AND WHY CAN’T I GET A CRUNCHWRAP?! Ok ok ok, hear us out—and be prepared to fall in love along the way.

When we first opened, we quickly realized we couldn’t reliably make it through dinner every day if we sold the full menu straight through from 11am. We smoke all our meat, which means it’s a finite resource… When she gone, SHE GONE.
So.. we allot a certain amount of each protein for lunch, cut it off at 2, and come back at 5 stocked up for a full dinner service. A lot of places just close between lunch and dinner—but we’ve already got folks here prepping, so why not keep the doors open? And even better, what if this time had its own signature offerings?

Enter: THE SIESTA MENU.

At first, it was cheap drinks, chips + dips, elote, and the only time to grab our smoked & fried chicken skins (iykyk). But some of y’all needed a lil more substance for your midday snack (or late lunch).

So waverlychickenman introduced TACOS DORADOS: house ground brisket + cheese stuffed in a corn tortilla, fried in beef tallow, then topped with pink onions, Banditos sauce, sour cream + queso fresco.
Now we will say these are small batch as well and some days they too will sell out. We’re working on it 🙃

Thanks to Siesta Menu, everyone gets fed, the kitchen can reset for dinner, and you can pregame your 5pm Crunchwrap. A win for all. 🫶

Ps.. did we mention the drinks are cheap?? $3 beers. All of em. 2–5PM Wednesday-Saturday. Come getchu some.

START TO FINISH ON OUR SALSA ROJA !!!
This is one of those things we got people hooked on at our pop-ups but didn’t really have capacity to do on the food truck… and people asked for its return again and again. THIS SALSA IS IT BABY. We smoke tomatoes, onions & jalapeños in small batches, then toss them in the blender with some other thangs and blend it up into what has become our signature Salsa Roja. The smoke just gives it a depth you can’t get from throwing everything in a blender raw. Not crazy hot. Not boring either. Just smoky, bright, a little spicy, and really dang good.
MADE FROM SCRATCH, LIKE EVERYTHING ELSE AROUND HERE!! AND PAIRED BEAUTIFULLY WITH OUR BEEF TALLOW TORTILLA CHIPS!!! MATCH MADE IN HEAVEN!!
