Never heard of Scalibut? We’re not surprised 🙂. It’s a GW Fins original created by Executive Chef Mike Nelson. He takes a filet of dense, meaty halibut and sears thin slices of buttery scallops on top.
Don’t think you see the scallops? Look again! They’re the beautifully golden brown pieces.
