🧂 menu highlight: saffron — the world’s most precious spice
saffron comes from the delicate crimson threads of the crocus flower. each flower produces only three threads, which must be harvested by hand—a labor-intensive process that has made saffron the world’s most valuable spice by weight.
prized for thousands of years throughout the mediterranean, middle east and asia, saffron brings much more than its brilliant golden color. its unmistakable aroma is floral, earthy and subtly honeyed.
this week, we pair saffron with lemon, coriander and allspice to season our slow-braised lamb shank, finished with apricot glaze and a rich lamb jus.
