Me in my most happy place

My soul feels most calm in two places: at the river’s edge, where the world slows, and in the kitchen, surrounded by conversations of friends and family.

And when those two places meet—cooking riverside over a campfire—I feel most in my element. There’s something about the crackle of the fire, the rhythm of the water, and a meal shared under the open sky that feels like home. My belly and soul feel so nourished :)

Happy belated birthday to meee ;)
For my birthday I made some very special folks slow roasted local pork rib Banh Mi sandwiches! Yum! Marinated in gochujang, miso and local honey. I also made some over night pickles; sesame onions and ginger carrots. Topped off with fresh chilis, cucumber, green onions and loads of cilantro, definitely one of my favorite dinners. Especially shared with friends.

I recently moved into a little (teeny tiny) place on a hobby farm. I’ve been spending this summer cooking, cleaning Airbnbs, weeding, planting and smelling flowers. Definitely need more kiddo play time in the river..
The past few years with MRC and my personal life have been a big transition. Moving, finding a suitable kitchen for my ever expanding business, a comfortable & cozy space to rest my head and balancing motherhood with work has been a challenge but nothing I can’t handle. The year of the horse has really ramped up and I cannot wait to see where this next chapter takes me :)

Within the newest venue in Marquette Michigan my amazing crew created a delicious spread of desserts for a bride with big vision. Greek foods are some of my favorite to make, eat and serve up! Especially when cooking with another amazing chef. Connor crushed the homemade focaccia and pita. We rolled spanakopita, skewered some chicken, made labneh, hummus & Feta spread Alsoooo… We combined pomegranates, sumac, cinnamon and molasses to create a yummy lemony fattoush salad. And we cannot forget the delicious dark chocolate raspberry cupcakes to finish off this epic catering overlooking lady superior. 🌊 🏳️‍🌈 ☮️ Thaks for your amazing help! You rockstar :)

Three pounds of fresh ginger root, five heads of home grown garlic, cinnamon sticks, fresh chilis, peas, toasted sesame seeds, coconut milk, spinach and cherry tomatoes are just some of the ingredients for this delicious curry.
The samosas started off by boiling the potatoes in pear juice and frying a bunch of spices including mango powder and fresh chilis!
I have a few classic cook books I like to browse while dreaming up recipes but the real magic happens when I’m standing over my stove with a bunch of ingredients to my side, crafting my “potions”… each dish is a fun experiment. Not written down just feeling it out as I go. Cooking is its own art form; Never knowing where I’m going but the outcome always is enjoyable.
-Vegan cauliflower & potato curry
-Spicy & sweet samosas
-Spicy pear chutney
-Tangy tamarind tomato chutney
-Cilantro yogurt chutney

Wild harvested mushrooms, locally grown peppers, lemon grass & pork bone broth With herb mushroom & pork dumplings. Methods like freeze drying and dehydrating foods ease the winter blues and make me feel so blessed to call this little place my home. Bellied up to a warm bowl of comfort knowing every hand that helped plant, raise, harvest and process my food. From meat to flour every part of this meal was either hand harvested by a local farmer friend. :)

I also had to share a photo of my last dumpling compared to my first. Practice and patience is needed for this process. It took me about 15 try’s to get an okay lookin one ;)

Between the storm systems we decided to head out for a winter camping excursion! Four kiddos, two doggos and two of my favorite elders, Jan & Rochelle. Teaching children how to live outside in the elements. Play time with no screens, allowing free exploration with watchful eyes, cooking over wood fire and nighttime storytelling. This is my kind of living. Night time temps were below zero and everyone stayed cozy under pine bows, wool blankets & sheep skins. The wood-stove kept the Egyptian cotton tent warm while we sipped tea and had so many giggles.

Here I made my take on gobi kofta. Roasted cauliflower, home grown potato, ground nuts & spices fried in a creamy tomato curry sauce. Ya know I may be a small town girl but I got big dreams over here…. Of eating world food and skiing —hucking off rocks. Enjoy! Nom nom.
