The Best Sip Is Hiding Under the Heat
Why coffee often gets sweeter, clearer, and more interesting after it cools.
Do you ever wonder why coffee nerds love to pour coffee from a carafe into a smaller cup before they drink it? It looks a little dramatic.
And yes, okay, sometimes we do things because they look dramatic.
But most of the time, that little move is not about theater. It is about temperature control. They are trying to get the coffee into a range where they can actually taste it. Not just feel the heat.
That is the weird little paradox of coffee: The cup is usually most exciting when it is fresh and hot. But it is often most interesting after it cools down.
Not cold. Not forgotten-on-the-counter cold.
Just cooler.
Warm.
Maybe even a little lukewarm.
The temperature range most of us have been trained to apologize for might be where the coffee finally starts to make sense.

Corner Coffee in the Casket Arts Building for Art-A-Whirl 2026 - what a fun weekend! For every day of the event, our team showed up in the lobby of Casket Arts to make over 700 drinks! It was a warm weekend, which we definitely noticed when BOTH of our cart espresso machines overheated. But after just a 15 minute delay and a few fans were brought in, we were able to get right back to business making espresso drinks.
Thankful for the team at Casket Arts for welcoming us back again, for all of the artists and art lovers who made our days so bright by stopping by to say hello, and for our cart team (Rich, Mitch, and Michael) who made it all happen!
