You’d never know it, but this photo is Fire & Ice culture in one frame. Emile — 35 years in, a table and a chowder named after him — is shepherding our newest prep star, Kaza, who is 35 minutes in, fresh from Berklee and a life mostly spent in Thailand, here for the summer.

On the card tonight: Hunter’s Half Duck- A partially de-boned half duck roasted to crispy skin and accompanied by house-cured pancetta, caramelized onion and sautéed mushrooms in a rich cognac butter sauce served over long grain and wild rice.

This is what a standard looks like. Not the score on a health inspection report — it’s Spencer at 5 PM, sleeves up, scrubbing in the heat AND apparently enjoying it, which is either a great sign about our culture or something we should probably look into..😉 Spencer rocks. We’re lucky he’s ours.💯🧹🫧
