From Mexico City to Fort Collins. 🇲🇽❤️🇺🇸

This Hispanic Heritage Month, we wanted to look back at where it all started.

The Taco Stop began with two young people, a small cart, a lot of long days, and food inspired by the place we came from Mexico City, Mexico.

We cooked under tents, worked events, served through Colorado heat and snow, grew into a trailer, then a food truck, and eventually opened the doors to our restaurant.

But somewhere along the way, The Taco Stop became much more than a business. It became our family, our team, and a community that has supported us through every chapter.

Our Mexican heritage will always be at the heart of what we do, and we’re incredibly proud to share a little piece of it here in Fort Collins.

To everyone who ever stood in one of those long lines, ordered from that tiny cart, found our food truck around town, worked alongside us, or walked through our restaurant doors gracias.

You are part of this story too.
