We first met Chef Satoshi Katakura () over dinner at his izakaya, Hiro, during a trip to Tokyo in 2014. One great meal turned into a great friendship 🫶🏼



Satoshi first came to Durham in 2016 for an omakase collaboration, and we've been cooking together ever since. We've spent time in each other's kitchens, explored farms and markets, and learned a lot from one another along the way.



Now he's heading back to Durham for his eighth collaboration with Dashi! ❤️ Every visit means a brand new menu, inspired by everything we've shared over the years. Join us for this special annual tradition!!

Join us September 21–24 for four special nights 🏮🌙 Each evening features a five-course menu created by Chef Katakura and Executive Chef Tony Zirpolo, with optional beverage pairings and non-alcoholic pairings.
