Chimayo Stone Fired Kitchen is a contemporary American bistro with a southwestern and mediterranean cuisine. Fresh salads, creative small plates, tapas, artisanal pizzas, and fire-roasted steaks, chicken and seafood are prepared in twin 600+ degree stone hearth ovens. Specialty cocktails and martinis, fine w**es, and 8 tap b**r selections changing weekly. Located in the renovated historic Century Building in downtown Durango, featuring large roll-up garage door windows for open air sidewalk dining. The large expo kitchen with chef's counter, 35-foot curved concrete bar, and restored historical features create a unique, casual fine dining experience.
