Oldie but goodie. Snapper Pontchartrain, a supper staple.

The dish takes its name from Lake Pontchartrain, the large brackish estuary adjacent to New Orleans named after Louis Phélypeaux, Comte de Pértrich, a French marine minister. Fish always topped with a Cajun trinity sauce + crab & wild mushrooms that can often be found in the saltwater lake.
