Pozole is on the menu, and it's not one to miss!

Pozole is a traditional Mexican stew with roots dating back to the Aztecs, where it was reserved for only the most special occasions. We're honoring that tradition with our own elevated take. Think a rich, red broth built with guajillo chili, garlic, onion, oregano, and premium Sakura pork.

What's Sakura pork? Think humanely raised hogs fed a clean vegetarian diet of corn and soy, free from hormones and antibiotics, named after the Japanese Cherry Blossom, because "life is short, beautiful, and pure."

We slow-cook bone-in Sakura pork shoulder and ham hocks to create a deeply rich broth, garnished with cabbage, radish, cilantro, cucumber, hominy, and lime.

Before leading the kitchen at Two Twelve, Executive Chef and Partner Anthony Nelson spent years chasing flavor, technique, and inspiration across the country.

From a three-month internship at the legendary Restaurant August in New Orleans to mastering the Omakase tasting menu at Nobu Las Vegas, Anthony’s career has been built on curiosity and constant evolution.
He’s worked farm-to-table kitchens in Nashville and Virginia wine country, sourced wild mushrooms for some of Las Vegas's top restaurants, rolled sushi, cooked whole hogs, and learned directly from chefs and farmers across the country - all in pursuit of refining his palate and understanding how he wanted to express food through his own lens.

Now rooted in Crested Butte, that journey shows up in every plate: seasonal, intentional, technique-driven, and always evolving.

Bright, fresh, and anything but an afterthought.

Our Limoncello dessert was created to be a vegan option that still feels layered, balanced, and deeply satisfying. Limoncello sorbet meets citrus supremes, strawberries, candied ginger, strawberry powder, and delicate feuilletine crumble for texture and contrast.

The little pop of ginger is what gives this dish its identity - vibrant, refreshing, and just unexpected enough to keep you coming back for another bite.
