This month, we are honoured to share Aceto Balsamico “Extravecchio”, a rare balsamic crafted by the oldest producer of balsamic vinegar in Modena, founded in 1605. Aged for over 25 years in antique wooden barrels, this exceptional aceto develops extraordinary depth, a velvety texture, and refined notes of plum, black cherry, honey, and oak.

“Trofie” was born along the Ligurian coast, hand-rolled by generations of home cooks long before pasta machines existed. At our restaurant, each trofia is still handmade, honoring the original craft of Ligurian pasta making. Its twisted shape was designed with purpose: to capture every drop of pesto Genovese.
And “pesto”?
From the word pestare, “to crush”, referencing the traditional preparation in a marble mortar with a wooden pestle.

A sauce never cooked, only gently emulsified to preserve the freshness and soul of Liguria.
