Wisconsin Hash, Redux: I sure wish I hadn't done this last week, because when I was trying to come up with a Labor Day dish I couldn't think of one better than this! Beer poached bratwurst griddled to golden crispness, seved with caramelized onions and beer cheese sauce. It's really, really good. $18

Tres Leches Pancakes: Cory has been thinking on this one for a minute. Our golden brown Pancakes with warm spices mixed in bathed in the traditional Tres Leches syrup and topped with fresh sliced strawberries. $13

Wisconsin Hash: A loving tip of the cap to our Northern Neighbors, who do a LOT of things right when it comes to deliciousness! Well, hey, everybody!

First, THANKS AGAIN for making our Fundraiser for Jeremy a big success! Your support means the world to them and to us! You all showed out, and as a result, this community raised $1400 to help defray their MANY expenses! We will be doing a Fried Chicken Takeaway dinner for them I a few weeks, so keep your eyes peeled for that!

Soul Food Extravaganza!

SOUL BOWL PLATTER: This one takes some explaining. To begin, you are going to get either Missisippi Pot Roast (the tangy gravy infused with ranch seasonings alone is worth it), Braised Turkey in a Creole Gravy, or the BBQ Brisket Burnt Ends (because apparently, you guys REALLY LIKED THEM), served over a scoop of corn pudding. Corn Pudding is part cornbread, part soufflé, and ALL delicious, and once you try it you will want it in your life forever. THEN, you get a side of baked to order, super creamy Mac and Cheese, and a side of our legendary collard greens. A real southern style Meat-And-Three plate, scratch made, for $20.

Blackberry Cobbler Pancakes: Again, since you all went crazy for the peach version, we thought we’d use the best berries of summer for this Mashup. Home made Blackberry Compote topped with streusel topping and a vanilla glaze. Goes JUST PERFECT with Soul Food! $14

Do you guys know why I call you my Legions?
It's because that’s how I think about my people. The Roman Legion was one of the most devastatingly effective infantry units in history, mostly due to one simple fact. Unit Cohesion. In the phalanx, you knew that the legionnaire on your left would cover you with his shield no matter what, and with either sword or spear in his right hand, he would fight your enemies until his last breath. And you did the same for the men on your left and right, and in that way, together, Roman Legionnaires conquered the world. TOGETHER.
So when I call you all my Legions, that’s what I think of. Protecting each other and fighting for each other, together.

And this weekend is demonstrating how exactly right that title, Legion, is. I am utterly and totally humbled by how many of you have come out to help us raise some money for our brothers Jeremy and Andy. The response has been heartfelt and overwhelming. From online donations to buying EVERY SINGLE ONE of Aunt Linda’s donated goodies to just coming in with a handful of cash and saying “This is for Jeremy”, this community has proven that we are just MORE when we fight together. So many of you have come to help a couple that you don’t even know. I have been kinda choked up all day thinking about it. About the trust you are putting in Me and Cory and Sara and Zach. That you would ANSWER my call for help, it just…WHO’S CUTTING ONIONS IN HERE?

PLEASE, PLEASE, PLEASE help us finish this weekend strong tomorrow! As a reminder, we are giving 20% of our net proceeds to Jeremy and Andy, so you can help by just ordering our food or coming by and letting us cook for you. If you can’t make it in, you can donate through Toast Online ordering, there’s an item under starters for Jeremy’s House ALS donation. We are out of Cinnamon rolls, but we are getting the Shrimp and Grits back tomorrow morning for a limited run, and we are SOLID on Burnt Ends hash and Sandwiches, and the Grilled Turkey Club combo. My dear, dear kindred,

You guys are so unbelievably awesome. I was thinking I would start our fundraiser for Jeremy and Andy tomorrow, but you, YOU GUYS, with your bad selves, wouldn't let me.

Ergo, we are donating 20% of our net to them from today also.

I am setting up a key in Toast to donate online. It will be set to charge $5. If you want to donate more, press it more. And we really hope you will.

Aunt Linda has decided to make some of her SIN-namon Rolls for the boys, we are going to sell them for $5 each, with all profits going directly to them. Y'all KNOW about these treats! Aunt Linda DON'T PLAY!

I have already posted our specials for the weekend, but we still have a few orders of Shrimp and Grits left, so we will have that for you until we don't!

I guess this is a good time to announce that in consultation with Cory, we have decided to do our SECOND Fried Chicken Takeaway, with proceeds to be donated to Jeremy and Andy. We are looking at dates, but this time we aren't taking pre-orders, we are just cooking chicken until we run out. We will have some down home sides for you as well. Collard Greens, Mac 'n Cheese, Candied Yams, and that's at the very least! We are still thinking, but stand by for announcements.

Look, everyone, we all know that things are hard in the world right now. It all seems SO BAD. But right here, right now, in this tiny neighborhood, you have a chance to do something really and truly good. Don't we all need that? Maybe, just maybe, if we start doing little things that are good, then we will remember that BIG good things are made up of little good things. Couldn't you use that feeling? It all starts, as it often does with Cory making a sandwich for his commute. Then it morphs into a special we roll out for you all, because we love you, and because Cory is a stone cold genius. You WILL ALL speak of the days when Chef Cory was your diner cook one day. Basically, it's a GRILLED CHEESE TURKEY CLUB SANDWICH with a bowl of our LEGENDARY Corn Chowder. Imma need you sll to stay with me. Griddled bread layered with crispy bacon, thin sliced turkey, and sliced tomatoes a median layer piece of bread with American and Swiss cheese melted on to it, followed by ANOTHER layer of turkey, shredded lettuce, and mayo. Classic Turkey Club, remained as a grilled cheese. Oh, THEN, we hit you with a bowl of our signature, home made Corn Chowder, just to round out the plate. Want lunch? Cone get some. Heck, this thing is so legendary you should probably eat it for breakfast. Eggs be dawned! $16, and that price is just because I want folks to turn out. It's a straight up steal.

Peach Cobbler Pancakes: If you've been around here, you know that we always try to cook with the seasons, and this is just one more example of that! Our fluffy, golden, buttermilk pancakes topped with sliced peaches that we have cooked off in caramel, finished with a drizzle of vanilla cardamom glaze. You will WEEP with the knowledge that you COULD have been eating like this, but you got lost. $16

Straight up Lemonade: Yup. Sometimes simple is best. HOWEVER, we are making this and we will give you an Arnold Palmer with our slow steeped, house made Iced tea for THE PERFECT ARNOLD PALMER. Either one costs $7.

Edgebrook Nation-

I'm going to beg your forgiveness for the length of this post.

It has been our singular privilege at ECS to see the way the community rallies around helping others. Your contributions and participation have made it possible for us to make permanent our program of giving breakfast to SNAP recipients. And for that, we thank you.

All of us believe that our little shops highest and best purpose is to feed and care for the community. And our community extends WAY past the geographic boundaries of Edgebrook. It encompasses all of our guests. Our regulars, our occasionals, and even brand new faces. Everyone, EVERYONE can call our little shop home. Unless you are awful, in which case we will eject you at hyperspeed. But I digress...

We have a married couple who were some of MY very first regulars from when I took over three years ago. They come in EVERY Saturday that they are in town. We know their order by heart. We have met both of their parents. They sit at Table 18 if they can. Andy and Jeremy. There is an article on the wall about Jeremy, if you look around. I say all that to say that these men are known to us, beloved of us, treasured of us.

Jeremy found out about a year ago that he has ALS. Lou Gehrigs Disease. It's a terrible disease, and Jeremy is a young man. ALS affects your motor neurons, making it impossible for you to use your muscles. It is, ultimately, fatal.

These beautiful, wonderful gentlemen are up against it. They have to have renovations done to their home so that Jeremy can move around with ease. They are going to have to get in home care to help out while Andy goes to work. He is an English teacher.

You all should witness their bravery and grace. They still come by us as they can. Same folks. Same order. And we have sworn that we will be their second kitchen, and will cook for them whenever they need us, even though Jeremy is a ridiculous vegetarian.

That said, we are hoping that the Legion will help us help them. This weekend, we will be giving 20% of our net income to them to help with their bills. We will also establish a donation key so that you can give them a $5 donation if you would like. We have seen the awesome power of this community. OUR community. We have seen how you show up to help people in need. Well, these two really need help, and we are going to do our bit, and we hope you all will join us in doing the same.

PLEASE, PLEASE, PLEASE come by this weekend. Or order online. Or Call in. Whatever. Just know that if you patronize us this weekend, you are helping some folks who REALLY NEED IT, just by dining with us. If you can, donate. We know how hard times are. BELIEVE ME, we know. But doing good and right things doesn't depend on how hard times are.

Stay solid. Be who WE know you are. You'll get a delicious breakfast or lunch out of it, I promise! And you will be taking a stand for a family in your community. Be an agent of love this weekend. Please.

Hey, Listen, my legions! I gotta tell you, Cory and I are going to do some FEROCIOUS stuff this weekend, and I am super, super excited about it! If you don't know, Monday is when we touch base every week and start to design the specials for the weekend. We have to plan, and then figure out our shopping list, and figure out how we are going to make the dish in a reasonable amount of time for you guys. I guess it's kind of like how Saturday Night Live starts figuring out their sketches. And best believe, our dishes are malleable until Saturday morning, and that, for us, is kind of the fun part. We absolutely LOVE flying by the seat of our pants for y'all! I really am excited to share the specials this week, because they are JUST SO DAMN DELICIOUS! Know that we love you, and that we are always thinking about how to get pure deliciousness in your mouth! We will talk to you all Friday!

Hey, all, just real quick, we had a little health trouble in the family thisbweek, but everthing is fine now and the affected pwrson is home and being well cared for. We thank you all for your many well wishes and messages. You guys are the best.

And now, on to these....

SPECIALS 8.8-8.14:

Shrimp and Grits: Nice big marinated shrimp seared off on the grill and served over our rich, decadent cheese grits, topped with our signature New Orleans style gravy. A classic dish, a fan favorite, and just a lovely breakfast! $19

Monte Cristo Sandwich: Another diner classic that we are trying for the first time! We are starting bu grilling up two slices of french toast, then layering them with Dijon Mustard, swiss cheese, thinly sliced ham and oven roasted turkey, and a black raspberry fruit spread and making a grilled cheese out of it all! This dish was hugely popular in the 50's and 60's, and was even rumored to be Walt Disney's favorite sandwich! Served with browns or chips. $16

Raspberry Limeade: It's gonna be HOT and muggy, and this little gem should be just the thing to replenish you! $7
