Not all scallops are created equal. Maine's cold Atlantic waters and one of the most carefully managed fisheries in the country produce exceptionally sweet, tender, and clean scallops that are impossilbe to find elsewhere. We source ours from and serve with white beans, caramelized fennel, and salsa verde.
Pair with a crisp bottle of muscadet whose dry, limestone minerality and high acid make fresh seafood sing.
