Feta psiti. A whole block of feta baked with tomatoes, olive oil, oregano and a pinch of chili flakes until it goes soft and golden. Ready in about 35 minutes. Recipe in the comments.

Greek roast lamb. A leg of lamb slit all over and stuffed with garlic, rubbed with lemon, oregano, rosemary and thyme, then roasted low and slow with a splash of w**e until it pulls apart with a fork. The potatoes cook underneath in the juices. Recipe in the comments.

Stifado. Beef cooked low for about two hours with a whole pile of small onions, red w**e, tomato, a cinnamon stick and a bay leaf. The onions go soft and sweet and the sauce gets thick. Bread for the plate, always? Recipe in the comments.
