Pinole is one of the oldest ingredients in Mexican food traditions, it’s made from toasted and ground corn, often mixed with spices and enjoyed as a nourishing staple for generations.

For this co**ha, we fold pinole into our dough, creating a subtle toasted corn flavor that feels both familiar and unexpected. It’s a small way of celebrating the ingredients and techniques that continue to inspire our kitchen.
