Hello spring 👋

Our braised leeks, morel mushrooms and sauce gribiche are one of my ultimate comfort bites this time of the year. Oh! And an anchovy for good measure 😉

Guys. She’s just as tasty as she is dreamy.

My inbox is inundated with unopened substacks that I have somehow subscribed to… but the one substack that I open on a fairly regular basis is Jeremiah Tower’s. Specifically if it’s the dead of winter and the subject line is “MY FAVORITE FISH SOUP WHEREVER YOU ARE AND IN WHAT SEASON”

In January he wrote about Bourride, a provincial fish dish that had me dreaming about spring.

All this to say… Esoterraculinarygarden has green garlic… turnips… and spinach. So the time has finally come for our springy cod take on bourride. I really hope yall love it just as much as we do 🫶🏻

We can’t wait to welcome Alice Anderson of .wine back to Annette on Wednesday, April 8! Alice and her partner Topher make some of our favorite wines in the world, many from grapes they farm themselves on the Ibarra Young Vineyard in northern Santa Barbara County, California.

While we’ve hosted wine dinners with Alice in the past, this year we’re doing things a bit differently by offering an approachable $60++ prix fixe menu with wine pairings alongside our regular menu. The prix fixe will include a salad, a pasta and a main course, all served as shared plates, as well as 3 three-ounce pours of wine from Alice’s spring release. Full table participation is required. Bar snacks and desserts can be ordered a la carte.

If you would like to do the prix fixe, click the link below to book and select the “Amevive Wines x Annette” experience in the booking flow. We’ll collect payment in house.

If you wish to order from the regular menu and simply drink the wine, book a regular reservation. Wine flights will be available in house for $20, featuring 3 three-ounce pours from Alice’s spring release. And if prefer to make a game time decision on the prix fixe menu, that’s fine too!

Reservations are now live on OpenTable.

Jake and Elena knocked this new mussels outta the park. It’s spring but also not spring… it’s the in between. And there is no better representation of that than this dish IMHO.

Coconut milk, shallots, loads of cilantro and mint and a kick of chili for good measure.

The chicken liver pate has been a staple since day one. And don’t worry… it’s not going anywhere!

We’ve just changed the looks bit— chicken liver pate with apricot jam and mostarda. I wanted every bite… to be the perfect bite. And now, it is!

(This also wouldn’t be possibly without texting non stop about recipes, and how pectin works, and cooking methods and and and AND) because if we aren’t learning and growing what are we even doing?

Dan and I have been working together for close to 12 years. He is a day-oner, the sort of person who doesn’t come around too often.

Dan is one of the main reasons we have as many regulars as we do. He invented the Annette standard of hospitality, and has championed it for the last nine years. He remembers names, and genuinely cares about each person that walks through this door. He goes the extra mile: You left your to go-box of leftovers? He’s gonna sprint through the marketplace to get them to you!!!

We survived the pandemic because of Dan’s willingness to throw himself at all the tasks. Take-out systems, parking lot runs, greenhouse building, and a whole lotta grunt work. Dan came to us with 10 fingers and is leaving with 9 1/2. He has literally sacrificed his body for this restaurant, and we couldn’t be more grateful. We will sure miss his speed walking around the restaurant!

This coming Saturday (March 14th) Dan will have his last day at Annette. While it will hopefully only be a temporary move out of Colorado… we hope that y’all will drop by to give a hug or raise a glass to Dan.

If you aren’t able to do that… perhaps you can donate what you are able to a GoFundMe for his family (link in stories).

Dan is headed home to help care for his mother, who has been diagnosed with early onset Alzheimer’s. In order to get her the full care she needs, he and his family need a bit of help.

Dan has taken care of us for nine years, and I know our community will step up and help take care of his family.

Here’s to Dan!

Restaurant week starts today. Every year we get tons of calls asking if we are participating. And every year the answer is no. Here is a BTS about our decision to not participate.

Whether you look forward to restaurant week every year or dread the crowds and seek out a quiet spot to hideaway… may we encourage you to go out to eat! The doldrums of January and February are real for our industry. Support the people you want to see in your community. Always and forever!!

Roast chicken seems to be on everyone’s mind these days. Maybe it’s because we all are looking for comfort, something familiar. And simple.

Our half roasted chicken has been on the menu since day one. It’s hard to execute a perfect chicken. And I think we do just that.

I’ll never forget the day came in with just 10 months after we opened and tweeted about Annette’s “perfect chicken” after his meal. Fast forward 9 years, and he’s still writing about perfect chickens in the .

Tonight, I’m craving our half roasted chicken and a side fries. Tomorrow, that’s just what I’ll be having.
