Oh my goodness… these last few days have been a whirlwind of abundance and filled with SO MUCH support. If I had had a minute to take a picture of all the hugs and recorded all the kind words it would make all of you feel good. And…if there was even a notion of doubt behind what has been a hard and long time in the making decision, it is all but smashed now. Thank you my friends for showing up. Thank you for supporting and what we have done here for so many years. Thank you for coming in to say goodbye and take down as many tacos as could fit onto your plates…you know who you are. :) The goal has been to show up and do our best and now… our goal in these last 36 hours will be to run it til the wheels fall off and the shelves are empty. Based on these last 2 weeks, seems likely it will happen. If you are coming in we can’t wait to see you! It’s going to be WILD! And we are ready! ✌🏻❤️🌮

Gratitudes Part 3

This post is for our guests.
Without them / without you…we would have not made it through the first day.
You are far too many to mention, way too many to thank…
And over the course of these coming 7 days and the 7 that came before, the hugs, the wet eyes, the big smiles and the congratulations… we are taking it all in my friends. It doesn’t make the process any easier, but it does reassure us that the last many years have not been for nothing.

Gratitudes Part two

This post is for our vendors and service providers.
I am a relationship person. One of my favorite things about my job over these last many years of owning and running restaurants has been the relationships I have built with the good people from whom we buy.

My first experience of this relationship building came while I was managing at Jax Fish House in Boulder. My friend Dave always encouraged me to make friends and therefore build rapport with our vendors. Many of the ties I have to the food and wine industry came from these days back in the 90’s.

From there I forged many a bond with all the good people we bought from while I was a part of Proto’s Pizza. I met one of my very best friends for life while there and she will always be one of the best parts of what I enjoyed during those years. Thank you .. that’s you I’m talking about.

But my very favorite relationship, the one I will love forever, was made when I asked my Shamrock rep for some good bacon. He looked at me and said he for sure could sell me some bacon, but if I wanted the best, I should call the boys over at . Erik was still making deliveries as he and Shannon were busy growing Tender Belly, and well… the rest is history. There were many a joke about how I got my pork prices down…. But mostly, there has been a life changing love that became my husband for which I am eternally grateful.
To the rest of the good people… too many to mention all here, I will never forget your kindness and good partnership. Herewith… Thankyou to , Tortillas Mexico, , , Mission Produce, , , , , , Stillman Meats, Chef Tek, , Superior Hoods , and all the rest I have missed because my brain is full. forever

This post if for the taco makers, servers, bar tenders and bussers, hosts and food runners, dishwashers and truckers and of course the chefs and managers.
My gratitude goes on forever for these people. I can not tag everyone here… and I’ll only mention those still on payroll today.
